Earl’s Amazing Shrimp Bowl

Ok guys… I know I’ve been the worst fashion/health/fitness/lifestyle blogger in all the land lately, so hopefully this will open the floodgates to lots of interesting blog posts forthcoming…

Ingredients

  • Olive oil
  • 1 lb peeled and deveined shrimp
  • 1/2 lb green beans, ends removed
  • 1/2 lb brussel sprouts
  • 1/2 yellow onion, finely diced
  • 2 heaping tablespoons of chopped or pressed garlic
  • One 14.5 oz can cannelini beans, drained
  • Cooked brown rice (or noodles)
  • Arugula as desired
  • 1/2 t red pepper flakes, or as desired

Directions

Cook brown rice according to package directions.

While that’s cooking, sauté Brussel sprouts in EVOO. Add splashes of water as needed to keep from over cooking.

Next, sautéed green beans in the same manner.

Sauté onions in EVOO until translucent. Add shrimp and chopped garlic, and sauté until shrimp are pink. Add salt, pepper and red pepper flakes and sauté for another minute.

Combine veggies, shrimp mixture, and beans. Sauté for another 5 minutes to combine flavors. Add rice and stir.

Serve on a bed of arugula or greens of your choice.
